A rich and savory dish with tender chicken, mushrooms, and a flavorful sauce.

Ingredients

  • 6 chicken thighs

  • 1 ½ teaspoons salt

  • 1 teaspoon black pepper

  • ½ teaspoon garlic powder

  • Olive oil spray

  • 3 tablespoons butter

  • 1 onion, chopped

  • 12 oz (340g) mushrooms, halved

  • 2 bay leaves (fresh or dried)

  • ½ teaspoon dried thyme or fresh thyme

  • 3 tablespoons flour

  • ½ cup (120ml) dry white wine (e.g., Chardonnay)

  • 3 cups (700ml) chicken broth

  • Fresh parsley or thyme for garnish (optional)

Directions

  • Season the chicken with salt, pepper, and garlic powder. Spray with olive oil.
  • Melt butter in a skillet over medium heat. Sear chicken skin-side down for 4 minutes, then flip and cook for another 3 minutes. Remove and set aside.
  • In the same skillet, sauté onions for 1 minute. Add mushrooms, bay leaves, and thyme; cook for 7 minutes.
  • Stir in garlic, cook for 1 minute, then add flour and stir for another minute.
  • Pour wine and chicken broth, then return the chicken to the skillet. Cover and simmer for 12 minutes.
  • Serve hot with mashed potatoes, rice, or pasta.
