Ingredients
6 chicken thighs
1 ½ teaspoons salt
1 teaspoon black pepper
½ teaspoon garlic powder
Olive oil spray
3 tablespoons butter
1 onion, chopped
12 oz (340g) mushrooms, halved
2 bay leaves (fresh or dried)
½ teaspoon dried thyme or fresh thyme
3 tablespoons flour
½ cup (120ml) dry white wine (e.g., Chardonnay)
3 cups (700ml) chicken broth
Fresh parsley or thyme for garnish (optional)
Directions
- Season the chicken with salt, pepper, and garlic powder. Spray with olive oil.
- Melt butter in a skillet over medium heat. Sear chicken skin-side down for 4 minutes, then flip and cook for another 3 minutes. Remove and set aside.
- In the same skillet, sauté onions for 1 minute. Add mushrooms, bay leaves, and thyme; cook for 7 minutes.
- Stir in garlic, cook for 1 minute, then add flour and stir for another minute.
- Pour wine and chicken broth, then return the chicken to the skillet. Cover and simmer for 12 minutes.
- Serve hot with mashed potatoes, rice, or pasta.
